Originally a university, with roots going back to the 16th century, the hotel has courtyards, gardens, and wide stone staircases, making a majestic impression. Guests easily feel like they’ve stepped back into the Renaissance: The lobby has a cathedral ceiling and is encircled by pillars, arches, and, on the next level, a balcony. The whole area is topped off with a glass dome that allows for natural light. The atmosphere is decidedly breathtaking and romantic, which probably accounts for the fact that the hotel is largely frequented by couples rather than families.

The hotel sits just outside the center of El Burgo de Osma, a village with shops, bars, cafes, and the Cathedral of the Assumption, all within walking distance. It's a rural area, though, and while the surroundings are pretty, those who crave city nightlife are in for a long car ride. It's a solid two hours to Madrid proper, and one hour and 45 minutes to the airport. Barcelona, at five hours away, is too far for even a long day trip. But travelers who are happy exploring the countryside will likely be content here: Castles, churches, and nature preserves (like Soria Fuentona Natural Monument, a picturesque area of ravines and gorges) are an easier drive away, and the hotel can arrange winery tours.

The rooms here get high marks for cleanliness, style, and comfort. Vibrant colors and sleek design blend with original stone walls and huge windows with wooden shutters. Bathrooms are large, with double sinks and a bidet along with a regular toilet. The showerhead is hand-held, though, and there isn't any shower door or curtain. High-end toiletries from the spa are offered, as are a minibar, robe, shower cap, and slippers. Noise isn't a problem in any of the rooms. Third floor rooms are closer to the pool, while second floor rooms have balconies that open onto the main courtyard. Even standard rooms here are large, especially by European standards. Free Wi-Fi is available, and all rooms have flat-screen TVs.

This large hotel has a variety of amenities. The spa is full-service and luxe, offering not only the basics like massages and facials, but mud wraps, a thermal pool filled with spring water, and Vichy shower massage in a setting with gorgeous design. The formal eatery, Argaela, is airy and filled with natural light, and -- like the rest of the property -- makes striking use of architecture. The tables are covered with replicas of ancient text, a befitting touch considering the property’s history. Argaela opens late by North American standards, though, so plan accordingly. There's also a cafeteria surrounding the main courtyard which serves snacks and lighter meals. Both dining menus make high-quality regional and European dishes.

The "business center" is really more of a corner with a computer and a desk. A more extensive meeting space is available for business travelers. There’s a clean, spacious kids' playroom, but it's not open every day, so ask ahead. The outdoor pool is also noted to have oddly cold water. Guests have use of a fitness center as well.
